Fatboy Heaven Ginger Beef Stew
A hearty non-traditional take on a classic Beef Stew. Replacing the beer with Reed's Strong Ginger Beer adds a whole new dimension to the flavor profile.

INGREDIENTS
- 2 lbs Beef Stew meat
- 3 tbs Olive oil
- 1/2 cup flour
- 1 bottle (12oz) Reed's Strong Ginger Beer
- 1 cup diced onion
- 3 ribs Celery, chopped rough
- 2 large carrots, sliced
- 4 cups Beef Broth
- 1 tsp parsley flakes
- 1 tsp oregano
- 2 tsp Cajun seasoning
- 1 tbs Fennel Seed
- 1 sprig fresh rosemary
- 2 lbs potatoes, diced
INSTRUCTIONS
- Add oil to large dutch oven
- When oil is hot, add beef to pot and brown on all sides (6-8 minutes)
- Add flour and stir to coat, cooking for 3-5 minutes until all flour is cooked onto meat
- Deglaze pan with ginger beer, scraping to get all browned flour off of bottom of the pan
- Add vegetables (except potatoes) and cook until softened
- Add beef stock, spices, and garlic
- Simmer for 3-5 hours
- Add potatoes and continue to cook until they are fork tender
- Serve
