I picked up some summer squash at the store this morning and added some onions, zucchini, and sweet bell peppers to the cart for a light stir-fry for tonights dinner. Carrie had the honor of cooking the first meal in our new kitchen, and she did it well. A rough chop of the veggies stirred into browned ground beef and sautéed to perfection.
Summer Veggie Beef Stir-Fry
INGREDIENTS
- 9 small sweet bell peppers, diced
- 1 medium onion, sliced
- 1 small zucchini
- 1 small yellow squash
- 2 lbs Ground Beef
- Salt & Pepper
- Onion Powder
- Garlic Powder
INSTRUCTIONS
- Brown ground beef in large skillet, seasoning with salt, pepper, onion powder, and garlic powder to taste
- Add veggies to skillet and sauté until softened but still crunchy, re seasoning to taste
- Serve over steamed rice
