I had some chorizo in the fridge and was trying to come up with a way to use it when I started thinking that it has been a long time since I had made Mac and Cheese. I picked up some gluten-free pasta made from quinoa flour and threw this together. It got rave reviews from the family, and I loved it as well.

When I was a kid we had a tight budget. Like "we're broke until payday and that's next week" poor. One of the ways Dad used to stretch out food from the pantry was a variation on this recipe that he would make with all of the stale bread that was left at the end of the month. While I don't need to stretch my grocery budget that far anymore, I decided to give this a try made the way I always dreamed of eating it as a kid.

Dinner Time - Baked Italian Layered Sandwich
All the flavors of an Italian Sub in a baked casserole
I saw this idea on Pinterest a few weeks ago and decided to give it a try last night. It was amazingly easy and came out just like a hot baked sub. The flavors melded together perfectly, and the crust made from cresent rolls worked well. This was a hit in our house, give it a try.

Dinner Time - Gluten Free Baked Ziti
I love baked ziti. Always have. So much cheesy goodness. Great meat sauce. For those of you that have never had baked ziti, think a combination of lasagna and pasticcio.
Using the best ingredients, just like anything else in cooking, makes for better food. So when I decided to try baked ziti gluten free, I was worried about the new pasta more than anything.
The brown rice pasta held up perfecly, as you can see from the picture. The cheese coated it perfectly, and it didnt have flavor or texture any different than a normal wheat pasta.
Try this one, you won't be sorry!
Dinner Time - Gluten Free French Onion Soup...with a twist!
I love french onion soup, and this seemed like just the day to enjoy it. I modified a recipe from AllRecipes.com to fit my tastes and our dietary needs, and it came out fantastic!
Adding the apples and bourbon gave it a very complex flavor profile, and using cheddar cheese to the top really helps set the combination of flavors off.
